Gluten Free Chicken Cacciatore

Serves 4-6
Chef Jon Molnar Chicken Cacciatore

Ingredients

3 tbsp. olive oil
3 boneless skinless chicken breasts (sliced)
Salt and Pepper (to taste)
1 tbsp. garlic (finely chopped)
1 medium green pepper (chopped)
1 medium red bell pepper (chopped)
1 medium yellow onion (chopped)
1 small pack (8 oz.) of mushrooms (sliced)
1 jar Chef Jon Molnar Genuine Tuscany Italian Pasta & Pizza Sauce
1 lb. gluten free pasta (you may substitute rice at 1/4 cup of rice per person)

Directions

In a large pan, add 2 tablespoons of olive oil over medium-high heat. Take sliced chicken seasoned with salt and pepper and brown in oil for 3-4 minutes per side or until brown. In the same pan the chicken was browned in add 1 tablespoon of olive oil. Add garlic, onions, mushrooms and peppers to the pan and cook vegetables with the chicken for 4-5 minutes or until they begin to soften. Add 1 jar of Chef Jon Molnar Genuine Tuscany Italian Pasta & Pizza Sauce and turn heat to low and simmer (covered) for 45-60 minutes. Boil 1 pound of your favorite gluten free pasta in salted water and drain. Add the cacciatore mixture over the noodles or rice and enjoy!
